Tomato Basil Soup

Ingredients

Ingredients:

  • 1 quart – milk
  • 1 quart – cream
  • 2 cans – diced tomatoes with juice 28 oz. each
  • 3 cups – tomato juice
  • 1 cup – carrots shredded
  • 1 cup – yellow onions ¼” diced
  • tablespoons – basil
  • 2 teaspoons – black pepper
  • 2 teaspoons – onion salt
  • 2 teaspoons – granulated garlic
  • 1 cup – flour
  • 1 cup – warm water

Instructions

Directions:

  1. Combine all the ingredients, except the flour and water, in a soup pot and bring just to a boil.
  2. In a mixing bowl, combine the flour and water until smooth.
  3. Slowly add to the hot soup mixture, whipping constantly.
  4. Simmer for 5 minutes or until thickened.

Yield: 1 ½ gallons
