Recipe: Tomato Basil Soup

Tomato Basil Soup

Ingredients:

1 quart – milk
1 quart – cream
2 cans – diced tomatoes with juice (28 oz. each)
3 cups – tomato juice
1 cup – carrots, shredded
1 cup – yellow onions, ¼” diced
1½ tablespoons – basil
2 teaspoons – black pepper
2 teaspoons – onion salt
2 teaspoons – granulated garlic
1 cup – flour
1 cup – warm water

Directions:

1. Combine all the ingredients, except the flour and water, in a soup pot and bring just to a boil.
2. In a mixing bowl, combine the flour and water until smooth.
3. Slowly add to the hot soup mixture, whipping constantly.
4. Simmer for 5 minutes or until thickened.

Yield: 1 ½ gallons
