Chicken Broccoli Salad

Chicken Broccoli Salad


1½ pounds – chicken breast
1 tsp – lemon pepper seasoning
3 quarts – broccoli, broken into 1″ florets
1½ cups – red onions, ½” diced
1 cup – mayonnaise
1 cup – sour cream
2 tbsp – lemon juice
1¼ tsp – salt
1 tsp – seasoned salt
¾ tsp – black pepper
½ tsp – granulated garlic


Preheat oven to 350 degrees.
1. Place chicken in a baking pan and sprinkle with the lemon pepper.
2. Bake at 350 degrees until done, about 15 minutes. Let cool, then dice into ½ inch pieces.
3. Blanch broccoli in boiling water for 1 minute.
4. Immediately immerse into ice water. Drain well.
5. In a mixing bowl, combine the mayonnaise, sour cream, lemon juice, and spices.
6. Place the chicken, broccoli, onions, and dressing mixture in a large bowl and mix gently until all ingredients are coated.

    I actually think this recipe tastes a lot better without the mayonaise/sour cream. I use greek yogurt and it cuts out the fats and tastes better.
